luatexja-fontspec を使うと、表題のとおり \labelitemiii が消えます。

\end{document}

luatexja-fontspec ではなく単に fontspec にすると ok でした。

環境は TeX Live 2017 (r44960), LuaTeX, Version 1.0.4 です。一応 \listfiles の結果です：
